I made Julia Child's Mushrooms and Cream Chicken


these are the ingredients needed to make this really simple recipe: chicken breasts, mushrooms, heavy cream, dry white wine (i used 1 part white grape juice and 1 part water instead), butter, olive oil, salt, pepper

-take 1-2 lbs. of chicken wash then dry with paper towels

-cut the chicken into smaller pieces (Julia did not say to do this though so it is up to you)
-add 1 tbsp. olive oil and 2 tbsp. butter (no fake stuff!) to a pan and let it heat up nicely

-add the chicken pieces and cook on either side for 5-6 minutes

-salt and pepper each side nicely and baste while cooking


this is what it should look like :)



-after the chicken is done cooking, remove the pieces to another plate and scoop out all the juice leaving behind about one spoonful

- this is where u add the white wine (1/2 cup)


I do not consume any alcohol in my diet, so I concocted this mixture (with some tips from a friend) of 1/4 cup white grape juice and 1/4 cup water

-add to the pan and scrape off the brown stuff, let it cook for a minute

- in another pan, begin browning your sliced mushroom with about 1/2 a tbsp. butter


 this is what it should look like :)
- when done browning, place the mushrooms to the side

- now add 1/4 cup heavy cream (again, no fake stuff!) to the pan with the wine/grape juice

- add the mushrooms too

- cook at boiling for a minute or two until the sauce thickens


- now add the cooked chicken pieces

- baste with the saucy juices


- cover the pan and let simmer for about 4 minutes

enjoy!
now wasnt that easy? the best part of this recipe for me is i did not have to chop any onions ^_^
